HOME MADE BAKED BEANS
We make a double batch and can them up for later
Really goes good with the Sausages
2 Pounds White Beans -(Great Northern or Navy or mix them both)
1 teaspoon - - - - - - - - - - - - - Baking Soda
1 Large - - - - - - - - - - - - - - - Yellow Onion - (sliced into rings)
1 Pound - - - - - - - - - - - - - - - Bacon - (chopped)
1/2 Cup - - - - - - - - - - - - - - - Granulated Sugar
2/3 Cup - - - - - - - - - - - - - - - -Molasses
2 teaspoons - - - - - - - - - - - - Dry Mustard
4 teaspoons - - - - - - - - - - - - Salt
1/2 teaspoon - - - - - - - - - - - -Pepper
1. Soak beans overnight in enough water to cover them. (or follow directions on bean bag)
2. Cook beans in ample water with the baking soda. Bring to a boil and simmer for 10 minutes.
Drain off soda water and rinse with water
3. Place Onion rings, over the bottom of a 3 Quart, un-greased, ovenproof casserole
dish.
4. Add half of the chopped Bacon on top of the onion rings and cover with all the prepared beans.
----Top the beans with the remaining chopped bacon.
5. Combine Sugar, Molasses, Dry Mustard, Salt and Pepper. (I add some hot water and stir together)
Pour this mixture all over the bacon on top.
Bake covered at 300 degrees F., bake for 7 to 8 hours until nice and brown.
You may want to use an oven thermometer to check your oven.
Temperature can make quite a difference. Check it to be sure.
